“ACESYSTEM Laboratory of Food Process Initiative” supported has been established in Osaka Metropolitan University in 1st May 2023.
ACE SYSTEM CO.,LTD., the donor to this laboratory, is a company whose main business is the development of cooking equipment using superheated steam as a heat source.
  
  

History
The research group led by Professor Shinichi Kitamura has so far focused on superheated steam-processing, supercritical CO2 extraction, and degradation and homogenization using a wet pulverizing system. Since 2011, ACE SYSTEM CO.,LTD. has conducted joint research with Prof. Kitamura and his  research group on efficient food processing (especially rice cooking) using superheated steam. As a result, they jointly received the President's Award of the Japan Society for the Promotion of Machine Industry for their 'commercial superheated steam cooking machine in 2019. This cooking machine was highly appreciated not only for its heating with superheated steam, but also for its stable steam processing in a temperature range lower than 100°C, its resistance to damage to food flavor, color and nutritional components, as well as its continuous mass cooking using a conveyor system.
