Laboratory of Food Process Initiative(FPI)

Our Mission

This laboratory aims to build a system to maximize the taste and functionality of food using data science, in particular machine-learning techniques. In addition, we will also work on reducing food loss by researching optimal food processing methods and enabling the long-term preservation of vegetables without losing their nutritional components.

We focus on the four technologies as followed.

1.Verification of processing methods to maximize the taste, functionality and shelf-life of vegetables and other crops containing a wide variety of nutrients, using various food processing techniques, including superheated steam processing.

2.Analysing how food processing changes the ingredients in food and what relationships exist between ingredients and processing methods.

3.To obtain information on food ingredients, large amount of data from analytical instruments such as LC/MS* or GC/MS** are analysed automatically in a series of workflows.
*LC/MS : liquid chromatography mass spectrometer,  **GC/MS: gas  chromatography mass spectrometer

  1. Machine learning analyses of our sensory expressions (e.g. sensory evaluation of aromas) based on the large amount of analytical data obtained from analytical instruments.
